Peppermint Bark Ice Cream Pie

This peppermint bark ice cream pie combines creamy vanilla ice cream with peppermint extract and crunchy candy canes, all set in a chocolate crust and topped with a luscious white chocolate ganache, caramel, and chopped Oreos.

What you need

cup caramel syrup

tbsp heavy cream

oz cool whip

qt vanilla ice cream

candy cane

chocolate cookie crust

cup white chocolate chips

cup oreo
Instructions
1. In a small bowl or measuring cup, combine the white chocolate and heavy cream. Microwave in 15 second intervals, stirring for 20-30 seconds between each session. Set aside to cool. 2. In a stand mixer with the whisk attachment, combine the ice cream, cool whip, crushed candy canes, and peppermint extract. 3. Pour the ice cream mixture into the pie crust. 4. Drop globs of caramel on the top of the ice cream while it's still soft. Gently swirl with a knife to create streaks throughout the pie. 5. Place the pie in the freezer for 30 minutes. 6. Remove the pie from the freezer and spread the white chocolate ganache over the top of the ice cream. 7. Top the pie with more chopped Oreos, salted caramel, and/or crushed candy canes. 8. Tent the pie with foil and place back into the freezer until ready to serve.
