Lemon Garlic Kale Salad

What you need

lemon

tbsp basil

tbsp parmesan cheese

garlic clove

shallot

tbsp dijon mustard
kale

cup romaine lettuce

tbsp fresh parmesan cheese

cup golden raisin

tbsp currant

tbsp slivered almonds
Instructions
For the dressing: 2 Combine all ingredients except oil and whisk until well mixed. Slowly drizzle in oil while whisking to emulsify. Season to taste with salt and fresh ground pepper. Set aside. For the salad: 4 In a food processor, process kale into small chopped pieces. 5 In a medium-sized mixing bowl, combine kale, romaine, raisins, currants and almonds. Season to taste with salt and fresh black pepper. Incorporate dressing and toss. Garnish with shredded parmesan and serve immediately.View original recipe
