What you need

tbsp fresh parsley
tsp lemon zest

tsp salt

tsp pepper

tbsp lite olive oil

salmon filet

tbsp dijon mustard
tbsp vegetable oil
lemon wedge
Instructions
1 Preheat the oven to 425 degrees. 2 In a small bowl, mix together the chopped almonds, parsley, lemon zest, salt, and pepper. Drizzle in the olive oil and stir until the crumbs are evenly coated. Set aside. 3 Place the salmon fillets, skin side down, on a parchment paper lined baking sheet. 4 Generously brush the top of the filets with dijon mustard. Season the top with salt and pepper. Press the almond mixture top of the mustard on each salmon filet in a thick layer. 5 Baked for 12-15 minutes, until the salmon is opaque all the way through. 6 Remove from the oven and cover with aluminum foil.
