For the grilled chicken thighs:
In an airtight container or plastic bag, add the chicken, italian dressing, and montreal steak seasoning. Toss to evenly coat.
Refrigerate and marinate for at least 30 minutes or up to 2 days. The longer the better.
When ready to grill, preheat the grill to high.
Remove the chicken from the marinade and drain off the excess. Grill chicken for 6-7 minutes per side or until the internal temperature is 165 degrees.
About 1 to 2 minutes before the chicken is finished, spread about 2 tablespoons of pimento cheese on top and cover the grill with the lid. Let the cheese melt and then remove from the grill
For the club sandwiches:
Top the bottom half of the bun with a pimento cheese chicken thigh, lettuce, tomatoes, and cooked bacon. Sandwich the top of the bun on top.
