Spread each cookie with nutella.
Take one side of the cookie and top with a scoop of ice cream.
Top with cookie the other cookie, chocolate hazelnut butter side facing down and gently push together to adhere.
Repeat with the however many cookie sandwiches you want to make. Place each finished cookie sandwich in the freezer as you work. Eat immediately or freeze, wrapped tightly in plastic wrap, until ready to serve.
Nutella does get hard in the freezer. So either eat them right away or remove them from the freezer about 5 minutes before eating.
